The Italian Bakery Method of pizza making is simply based on freshness. The provolone is grated and the dough and sauce are made fresh daily in our kitchen. The dough and sauce are cooked at high temperatures until the crust is slightly crunchy with a good bit of chewiness with the sauce steaming hot. Only then is the cheese and pepperoni added. This creates layers of fresh, fragrant pepperoni and provolone atop a solid base of fantastic crust and delicious sauce.
